Shui Xian Bai Cha Cake "DANG"

A first in many ways, this tea is now also first in my heart.

Made from a Dan Cong Shui Xian varietal, this tea was harvested and wilted by a third-generation tea master in Wudong Villiage. The tea was then pressed into these gorgeous cakes.

This tea is worth trying just to see how the dan cong oolong flavor exists within the spectrum of white teas -- it really covers both categories with such ease. Brew it light and it really comes out as a white (a kind of shy-bitter medicinal flavor, a lightness on the tongue) but brew it a bit harder and it evolves into a white tea in an oolong disguise. Out come all the amazing and intoxicating stone-fruit florals of its oolong sister.

A really amazing tea on so many levels. Kind of like if Michael Jordan would have been really good at baseball too. A true crossover legend.
